Deviled Duck Eggs

DEVILED DUCK EGGS

12 Hard boiled duck eggs

1-1/2 tablespoon mayonnaise

1 teaspoon pickle juice

1 teaspoon mustard

1/4 teaspoon salt

1/8 teaspoon white pepper

1/8 teaspoon onion powder

1/8 teaspoon garlic powder

Hardboiled duck eggs can be made by placing the eggs in a saucepan, fill with enough water to cover the eggs in the pan. Place over medium high heat and set a timer for 15 minutes. Remove eggs from hot water and place into cold water. Let hot eggs cool for 20 minutes. Remove the shells from the cooled eggs. Cut each egg into  half, longwise (lengthwise).

While eggs are cooling: cream all other ingredients together. Remove the egg yolks from the cooled sliced eggs. With a fork, smash only the yellow yolks until smooth. Add the creamed egg yolk to the mayonnaise mix. Make the mixture smooth and creamy by stirring and smashing with the back side of a spoon. The mixture should cling to the spoon and not fall or drip off. Place the mixture in the refrigerator to chill, about hour.

Stuff each sliced egg white with the chilled egg yolk mixture. Slightly over fill. Arrange the stuffed deviled eggs on a plate or tray. Cover lightly and store in refrigerator until ready to serve.

This is a great holiday appetizer or hors d’oeuvres. Sprinkle with Sweet Paprika just prior to serving to guest.

Cover and place eggs on ice, in cold, or refrigerate within an hour. If uneaten deviled eggs have come to room temperature for more than three hours, toss ’em in the trash. Your guest can get a stomach ache from the mayonnaise. Most husbands will freak, if they see you throwing away food. Don’t let him eat more than two eggs the whole day and throw any and all bad food into a brown paper bag, toss that bag into the regular trash.

If you use Miracle Whip, remove salt from recipe, refrigeration is still required.

Squeaky the Duck, is a pekin duck. This domestic breed has a crown of feathers on top of their heads. Raising Pekin ducks for eggs is the most common reason for breeding. The Pekin duck is considered a good egg producer. Duck eggs are full of extra vitamins and calcium.

All the duck web-sites all talk about how fast the Pekin breed grows faster than any other duck, thus they make a good, good food source. At ten weeks old a pekin duck is ready for the market and could weigh over 7 lbs. Squeaky the Duck is a pet. She is expected to live anywhere from 2 to 20 years.

Squeaky the Duck is a house pet, this is not recommended, unless you have the indoor space and patients to wipe up a lot of messes.

    It is perfectly, ok to fill the egg half before chilling, however, you and your spouse may be tempted to start eating as soon as they see a deviled egg. Letting the seasoned mayo and yolk set for an hour before serving, provides enhanced flavor.
